“Sansai” is general name for mountain vegetables that grow naturally in the wild, and not grown and harvested from fields.  Mountain vegetables are very important for cuisines of snowy North Japan since the amount of green vegetables is limited.  In traditional Sansai cuisines of Akita, creative way of utilizing the vegetables can be found in the way of preservation and cooking.  Among many kinds of Sansai, the most popular one is called “Fuki.”  They are commonly found in places that get a lot of sunshine such as rice fields among mountains, roads beside mountain stream, or hills,  There are varieties of these vegetables depending on areas.  Many mountain villages have their own types of Sansai cuisines, so you can enjoy the difference and find out what you like the most.
